Smart biodegradable composite films based on chitosan/polyvinyl alcohol containing Murraya koenigii anthocyanin for monitoring freshness of fish fillets

Recent years an eco-friendly packaging materials are emerged as an alternative polymer materials required to improve the food quality, safety, nutritional value, shelf-life, sustainability and biodegradable. Present work described novel multifunctional smart packaging material fabricated by immobilizing Murraya koenigii ripen fruit containing anthocyanin on to the biodegradable polymer matrix consisting of chitosan and polyvinyl alcohol [CS/PVA, (CPM)]. The barrier, UV-Vis screening, physico-mechanical, and optical properties of the prepared anthocyanin loaded films were characterized. The color of the multifunctional smart films depended on the pH and ammonia gas levels observed, due to change in the molecular structure of the anthocyanin. The films changed color from reddish/pink to violet to green to yellow as the pH increased from 1 to 14 noticed. The incorporation of the anthocyanin content into the films also increased their tensile strength, light screening properties, cell viability, and antioxidant activity (DPPH radical scavenging). The anthocyanin loaded films showed compatible with the selected combination biopolymer matrix, and tested microstructure & spectroscopic characteristic of the prepared films. Further, we demonstrated anthocyanin-loaded films are emerged as a smart packaging material to monitoring physical changes in the freshness of the fish meat packaging tested.
