The invention discloses a preparation method of a protein emulsion for manufacturing products such as meat substitutes, meat supplements, egg substitutes, dairy product analogues and the like, and a method for preparing various meat substitutes, egg substitutes, dairy product analogues and the like by using the emulsion. Also disclosed are vegetable protein debris for meat substitutes, which may be used alone or in combination with an emulsion.
