The present invention discloses a production method of poultry meat raw material for soup product, including: slaughtering poultry after quarantine, drawing blood, removing hairs or feathers, drawing for removing viscera of the poultry, slicing into 5 meat cubes, cleaning, draining, performing heat treatment with superheated steam, performing air-cooling and individual quick freezing, packaging and storing at -18°C. The production method retains the umami of poultry meat raw material to the maximum, ensure the delicious taste of the final soup product, solve the problems of poor meat quality and insufficient umami in the soup product produced with eXisting 10 frozen raw materials, and provide a technical basis for the industrialization of soup products. 15
