A method of producing meat analogue 10 comprises forming fibrous muscle tissue analogue 11 by (i) subjecting base material 9 comprising non-animal derived protein to high temperature texturisation which denatures the protein and forms substantially parallel fibres, and (ii) partially separating at least some of the fibres of the fibrous muscle tissue analogue. The high temperature texturisation process may be extrusion through a die or shearing in a shear cell. The fibre separation step may comprise compressing the muscle tissue analogue, e.g. using rollers 40 or a press. The muscle tissue analogue may be marinated, e.g. in a bath 41, after fibre separation, and/or a binder, e.g. a fat analogue, may be applied. The binder may bind the separated fibres. Alternatively, the binder may bind first and second muscle tissue analogues, with the fibres of each analogue being parallel, and with the bound analogues being subsequently cut through a plane parallel to the direction of the fibres. An apparatus comprising a high temperature texturiser and a fibre separator, a meat analogue, and a method of producing a meat analogue comprising first and second bound fibrous muscle tissue analogues are also claimed.
