METHOD FOR PROCESSING COLLAGEN-CONTAINING RAW MATERIALS

SUBSTANCE: invention relates to the meat processing industry, and in particular to the pre-treatment of secondary collagen-containing raw materials. The method for processing collagen-containing raw materials includes preparation and grinding of secondary raw materials, mixing it with a bacterial concentrate, mixing until a homogeneous consistency and holding. The stomachs and combs of chickens are used as secondary raw materials. The crushed raw materials are additionally mixed with curd whey in a ratio of 1:8. The mixture is homogenized in a homogenizer for 1 minute at 28,000 rpm. As a bacterial concentrate, a liquid concentrate of bifidobacteria Bifidobacterium longum B379M is used, which is added in an amount of 12-13% by weight of the mixture, exposure is carried out at a temperature of 39-40°C for 9-12 hours. The mixture is then filtered and dried in a freeze-dryer at minus 40°C to a moisture content of ≤8%.
EFFECT: invention is aimed at creating a final product from collagen-containing poultry processing raw materials with a high protein content and improved organoleptic properties.
