MECHANISM FOR CUTTING AND STRIPPING CHICKEN NECK MEAT

[Problem] To provide a mechanism for cutting and stripping chicken neck meat, said mechanism being capable of preventing cutting to the cervical vertebrae even in the case where the neck meat of birds with different neck diameters is cut and stripped on a single conveyor system. [Solution] A base board 2 is equipped with a cam 12 that is a height adjustment means. Furthermore, the base board 2 is equipped with a flexible part 2b that deforms in response to a pressing action toward the upper surface of cervical vertebrae 1b, said pressing action being due to the clamping of a chicken neck 1 placed on a groove 2a of the base board 2 by a clamp 4a, so that the upper surface of the cervical vertebrae 1b can descend under a pair of the blades 4a.
