ENVIRONMENTALLY FRIENDLY METHOD FOR PROLONGING THE SHELF LIFE OF LAMB IN A BIODEGRADABLE FOOD FILM COATING

FIELD: meat processing industry.
SUBSTANCE: invention relates to the meat processing industry, and in particular to the use of a protective film based on sodium alginate to cover the surfaces of fresh meat raw materials and semi-finished meat products. The method for prolonging the shelf life of lamb in a biodegradable food film coating involves the use of a sodium alginate solution with a concentration of 1-2% as the basis for the film-forming composition. The solution is obtained by mixing water at a temperature of 50°C with sodium alginate powder directly in a funnel with constant stirring with a stirrer at a speed of 120 rpm. The resulting gel is cooled to a temperature of 0±2°C, allowed to swell for 3 hours, cooled to 2°C. A homogeneous transparent film on the surface of the lamb is obtained by immersing the lamb in the gel or spraying the gel onto the surface of the lamb.
EFFECT: invention is aimed at simplifying the production method, maintaining quality, prolonging the shelf life, and reducing the weight loss of mutton.
