ABSTRACTA process for making uniform, smooth and succulent seekh kebabs without hardening of outer layerThe present invention discloses a process for making uniform, smooth and succulent seekh kebabs without hardening of outer layer. The process broadly includes steps of preparing minced meat batter for the kebabs, forming oblong shaped seekh kebab using sausage stuffer, moist cooking of the seekh kebab, and charcoal broiling of the moist cooked seekh kebabs. The present process solves the drawbacks present in the existing state of the art such as detachment of the meat mixture from the skewer during holding prior to charcoal cooking, possibility of contamination of uncooked seekh kebabs, case hardening of outer surface of the product and under cooked product, higher cooking loss due to longer char coal broiling, higher levels of harmful smoke substance on the product surface and charring of the product. Medium scale meat processors can use this process to produce higher quantity of seekh kebab using sausage stuffer without additional equipment. Figure 1
