The system comprises a cleaning machine, a screw elevator, a crusher, a screw conveyor, a fusion box, a feeding screw pump, a three-phase horizontal screw machine, a three-phase separator and a movable collecting hopper which are sequentially arranged along the sequence of a technological process, olive fruit raw materials are conveyed into a cleaning machine to be cleaned, then the cleaned olive fruit raw materials are conveyed into a crushing machine to be crushed and pulped, the pulped olive fruit pulp is conveyed into a fusion box to be pretreated, the pretreated fruit pulp is conveyed into a three-phase horizontal screw machine to be subjected to first-time three-phase separation, the fruit pulp is separated into oil, water and residues, and the oil, the water and the residues are discharged into different collecting containers respectively; and carrying out secondary three-phase separation by using the three-phase separator to finally form qualified finished oil. The method can effectively improve the oil yield of the olive fruits, and avoids the problem that oil cannot be extracted or extracted olive oil is turbid.
