METHOD FOR PREPARING ROASTED KOREAN TRADITIONAL SWEETS AND COOKIES USING FIGS

The present invention relates to a method for preparing roasted Korean traditional sweets and cookies using figs. The method for preparing roasted Korean traditional sweets and cookies using figs of the present invention comprises: a fig low-temperature aging step (10) of preparing low-temperature aged figs (1) by aging figs at low temperature; a fig syrup preparing step (20) of preparing fig syrup (2) using the low-temperature aged figs (1); a dough-making step (30) of making dough (3) for Korean traditional sweets and cookies by mixing and kneading the fig syrup (2) and glutinous rice powder; a molding step (40) of molding the dough (3) for Korean traditional sweets and cookies into a desired shape to prepare a flattened dumpling (4); a dry step (50) of drying the flattened dumpling (4) to prepare a dry flattened dumpling (5); an oil coating step (60) coating the dry flattened dumping (5) with olive oil to prepare an oil-coated flattened dumpling (6); and a roasting step (70) of roasting the oil-coated flattened dumpling (6) coated with olive oil so that roasted Korean traditional sweets and cookies (7) are prepared. By means of the present invention, roasted Korean traditional sweets and cookies added with unique texture and nutrients of figs can be provided, compared to a preparing method including a frying process, the unique texture of fig granules can be kept through a non-frying preparing method, the degree of acidification is alleviated, a greasy taste of oil, created due to a frying process, is reduced, the deterioration of taste which occurs during long-term storage is reduced so that the shelf life is increased, the surface of the Korean traditional sweets and cookies is coated with oil so that the Korean traditional sweets and cookies which are not high in calories compared to fried food can be provided, and the Korean traditional sweets and cookies which have a nutty taste and an excellent texture can be provided.
