FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for obtaining oil extracts, providing for loading into a mechano-acoustic homogenizer of unrefined sunflower or olive oil or a mixture thereof in a ratio of 1:1, with spicy vegetable raw materials selected from dill, or oregano, or parsley, or garlic, or a mixture thereof, or a mixture of red mountain ash fruits, hot capsicum and spices of cardamom or star anise, at a ratio of 1:10-18 for spicy vegetable raw materials or 1:15-30 for a mixture of red mountain ash fruits, hot capsicum and spices of cardamom or star anise, extraction of raw materials at an intensity of exposure to raw materials of 100-500 W/kg until a temperature of 45°C is reached, exposure at the same temperature for 30 minutes, filtration using centrifugation lasting no more than 30 minutes, bottling in prepared containers, cooling, labeling, storage in a place protected from direct sunlight at a temperature not higher than plus 20±2°C for 12 months, while a mixture of red mountain ash fruits, hot capsicum and cardamom or star anise spices is obtained at the following ratio, wt. %: red mountain ash fruits 0.7-0.8, hot capsicum 0.05-0.1 and spices cardamom or star anise the rest.
EFFECT: invention makes it possible to reduce the extraction time to ensure the safety of extracted biologically active substances from plant raw materials, to increase the yield with a decrease in energy consumption, to obtain non-emulsified products resistant to oxidation processes for a long storage period.
