The invention provides a method for extracting olive oil under the assistance of high-speed shearing, which comprises the following steps of: crushing olive fruits, mixing with water, shearing at a high speed, fusing and preserving heat in sequence to obtain extracted fruit pulp; sequentially carrying out solid-liquid separation on the fruit pulp to obtain an oil-water mixed solution; and sequentially carrying out oil-water separation and standing on the oil-water mixed solution to obtain the olive oil. A high-speed shearing extraction technology is adopted, so that multiple components such as olive oil, polyphenol, organic acid, unsaturated fatty acid and rich vitamins A, D, E, F and K in the olive fruits are extracted to the maximum extent, the oil extraction rate of the olive oil is obviously increased, and functional components such as polyphenol in the olive oil are obviously increased; the result shows that the oil extraction rate of the olive oil is increased from 15.6% to 24%.
