The present invention relates to a meat processing method which process various meats such as beef, pork, chicken, duck, goat, and lamb. According to the present invention, a mixture prepared by forcibly mixing water with vegetable oil, such as olive oil, aromatic oil, herbal oil, palm oil, grape seed oil, sunflower oil, coconut oil, corn oil, soybean oil, and sesame oil, a broth made by boiling processed meat until content, such as meat, bones, and intestines, are sufficiently infused, or fat from processed is injected into various refrigerated, frozen, or raw meat. Accordingly, when the mixture produced by mixing water with vegetable oil, a broth of processed meat, or fat of processed meat is injected into various meats, the texture of meat is softened or unique odor is removed from the meat and flavor is added to the meat, thereby increasing a consumer's preference for various meats.
