Disclosed is a fish sausage made from drained minced fresh fish, dehydrated garlic, sweet paprika, hot paprika, salt and extra virgin olive oil, wherein, the sausage is produced by: mincing and draining the fish to be used; adding dehydrated garlic, sweet paprika, hot paprika and extra virgin olive oil; mixing everything; leaving the mixture to marinate covered, for at least 24 hours at 0-4ºC; and subsequently stuffing and leaving to air. A flavoured sausage with very good organoleptic properties is obtained.
