The present invention relates to a process for the extraction of oleosomes, useful as emulsifiers in food preparations, starting from an intermediate in the production of olive oil, namely olive paste, by means of a simple process, allowing obtainment of oleosomes in high yields with a high polyphenol and flavonoid content, and thus with a high antioxidant power.
