A PRODUCT BASED ON OLIVE OIL, ENRICHED AND SUPPLEMENTED WITH ANTIOXIDANTS

The product is enriched and supplemented with additives including organic and inorganic antioxidants. The organic antioxidants include plant-derived polyphenols which are preferably different from those naturally present in olive oil, and optionally vitamins, and said inorganic antioxidants include selenium-based derivatives. The production process includes the following stages: dehydration of the polyphenols, dissolution of the polyphenols in glycerol, mixing, preparation of oily solutions of the vitamins, mixing of the abovementioned coumpounds and of the inorganic antioxidants with an amount of oil such as to support a dispersion of the enriching substances which is 20 times higher than the concentration which the finished product is to have.
