Fuente: WIPO "dairy products" In an apparatus for separating cheese curd from whey the mixture is fed into a rotatable trommel 22 which is mounted upon the trommel frame 21 within the main frame 20 and which is tiltable about pins 33 located at the discharge end. About one third of the trommel surface is perforated with circumferentially disposed elongated slots 77 for the drainage of whey into the flanged receptacle 90. A series of helically extending lifting members 78 ( not shown is mounted within the trommel for lifting the curd during rotation. A means is provided for varying the speed of rotation of the trommel but the number of revolutions and the period of drain age of the whey between successive revolutions will vary according to the nature of the milk product from which the curd is formed. Curd is discharged through the automatically controlled door 80 into chute 100 thence into fusion tower 110. Drained whey is fed into a vibratory sieve assembly 96 via pipe line 93 whereby the fines are seperated from the whey and transferred to the curd granules in the fusion tower.
