The present invention relates to red pepper paste containing milk products which pungency is reduced and a preference is improved by passing through a ripening process after milk products are added in the production process and to a manufacturing method thereof. Red pepper paste containing milk products produced by the method according to the present invention has an effect that the pungency is reduced, a mild taste is increased, and the color gets better, whereby red pepper paste with an improved preference can be produced by the method for manufacturing red pepper paste containing milk products of the present invention. In addition, milk is perfect food, as a raw material of dairy products, having all the nutrients required for human bodies, and thus red pepper paste in which dairy products are added is nutritionally excellent.
