Method for rapid detection of microorganisms in dairy product

The invention discloses a method for rapid detection of microorganisms in a dairy product. The method includes the steps of: (1) making use of a statistical analysis technique to analyze the activity value and bacterium carrying value of the dairy product so as to obtain a linear equation of a unary linear regression curve as the following: y=(0.8983x-523.78)/10, wherein x stands for the activity value and y stands for the bacterium carrying value; and (2) utilizing a microorganism activity rapid detection instrument to detect the activity value x of the dairy product, and detected bacteria; dairy products using rapid detection of microbial activity value x, then applying it in the formula obtained in step (1), thus obtaining the bacterium carrying value y of the dairy product. The method provided in the invention shortens the microorganism detection time from 46-50h or even 5d based on a national standard method to 30min based on an instrument method, can realize microorganism online detection of finished products, and ensures quality safety.
