The present invention provides a curdlan—containing fat replacer, a method for preparing the same and use thereof. The fat replacer comprises curdlan, PGPR, and a lipid. The fat replacer exhibits a water separation rate of less than or equal to 2.2% after hot shearing after 28 days of storage, an instability coefficient of less than or equal to 2.9 after 28 days of storage, and a dynamic coefficient of friction of 0.10—0.15. The curdlan—containing fat replacer provided in the present invention has the characteristic of high hot shearing stability and storage stability.
