Fuente: WIPO "milk" Consists in treating the buttermilk from the churn in order to reduce the acidity to about 0-2 of 1 per cent of acidity by ascertaining the acidity of the buttermilk and reducing it by the addition of carbonate of soda allowing the buttermilk to flow into a receptacle from which it may be drawn as required and raising the temperature of the withdrawn portion as it is being withdrawn and or passed to a centrifugal separator. The object is to extract the butterfat almost instantaneously after the application of steam to the buttermilk thus preventing the acidity in the buttermilk from precipitating the casein contained therein as it is stated occurs if the buttermilk is heated in the bulk or quantity and then gravitated to the separator and also to shatter by means of the dual combination of pressure and heat from steam all the particles of fat and render them readily separable by centrifugal force as in fresh milk. The apparatus conveniently comprises a vat to receive the buttermilk from the churn a controlled outlet therefrom an intermediate receptacle under or in communication with the outlet and from which inter mediate receptacle the - buttermilk is withdrawn a withdrawal or suction pipe depending into the recep tacle and being connectible at its upper end to the suction or intake branch of a steam ejector an air inlet cock in the wall of the intake of the ejector or in the pipe leading thereto a steam ejector connected at its steam entrance branch to a steam pipe from a source of supply and having a control cock therein a heating and delivery pipe connected at one end to the discharge branch of the ejector and having its other end closed by a removable and replaceable cap a branch pipe from the heating pipe to a separator and having a control cock therein and if desired a return branch pipe from the heating pipe to the intermediate receptacle and having a control cock therein the joints of connecting parts being so constructed that ready disconnection to permit of cleaning and re assembly is it is stated facilitated [ 2 figures 8 claims ].
