The invention discloses wine with SOD (superoxide dismutase) activity and a preparation method of the wine. The wine is prepared from plant extract containing SOD, modified albumin, white spirit and a cross-linking agent, wherein the modified albumin forms nanoparticles to coat the plant extract containing SOD (superoxide dismutase). SOD in the plant extract is coated with albumin and then fused with the Baijiu, the characteristics and typicality of traditional Baijiu are kept, the taste of the traditional Baijiu is kept, and the Baijiu is free of peculiar smell and good in palatability. Meanwhile, the activity of the SOD in the Baijiu can be kept, the SOD reaches the intestines through the stomach of the human body to be absorbed, excessive free radicals in the body are efficiently removed, and the effect of balancing the function of the human body is achieved; albumin serves as an important nutrient substance in a human body and is absorbed at the same time. In the preparation process, albumin nanoparticles are formed by utilizing the physicochemical property difference of albumin in water and ethanol of Baijiu to coat SOD in the plant extract, the reaction is mild, the operation is simple, the preparation steps are few, and the reaction speed is high.
