The invention belongs to the technical field of wine brewing, and relates to a volatile substance composition characteristic-based sorghum variety identification method, which comprises the following steps of S1, obtaining volatile substances in sorghum and relative quantity information corresponding to the volatile substances; and S2, substituting the relative quantity corresponding to the volatile substances in the sorghum obtained in the step S1 into a PLS-DA discrimination model for discrimination calculation, and realizing identification of the sorghum variety according to a calculation result. The PLS-DA discrimination model is a variable equation between the relative amount of the corresponding volatile substance in the sorghum and the variety of the sorghum corresponding to the sorghum. Based on composition difference characteristics of 38 volatile substances in sorghum, the PLS-DA discrimination model constructed by a PLS-DA analysis method can accurately and scientifically discriminate the sorghum variety, so that the discrimination of the Maotai-flavor high-quality wine-making sorghum, especially the Hongzi sorghum variety is further realized, and the method has the advantages of high-quality wine-making sorghum variety, high-quality wine-making sorghum variety, high-quality wine-making sorghum variety and high-quality wine-making sorghum variety. The invention also provides a novel method for understanding and evaluating the sorghum brewing quality.
