By controlling the time and temperature of the Maillard reaction, the sliced fish has better color and luster and is free of sour, astringent and fishy smell, the sliced fish is uniform in thickness and less than 2mm, and the sliced fish has smoked flavor and cool and refreshing taste, is suitable for people of all ages, and can be used as a preferred product of snacks, cold dishes or pickled dishes together with wine.
