The invention discloses smoked tuna meat slices which have light sweet taste and smoked taste and are free of sour, astringent and fishy smell, and the smoked tuna meat slices are obtained by performing pickling and seasoning on cooked complete tuna meat blocks through sweet pickling liquid and performing the processes of smoking, drying, slicing and the like. By controlling the time and temperature of the Maillard reaction, the sliced fish has better color and luster and is free of sour, astringent and fishy smell, the sliced fish is uniform in thickness and less than 2mm, and the sliced fish has smoked flavor and cool and refreshing taste, is suitable for people of all ages, and can be used as a preferred product of snacks, cold dishes or pickled dishes together with wine.
