Production process of dry red wine

The invention relates to a production process of dry red wine. The production process of the dry red wine comprises the following steps: (1) sorting red grapes, crushing and removing stems to obtain grape pulp; (2) sulfur dioxide and distiller's yeast are added into the grape pulp, layering is generated after alcoholic fermentation, and the middle layer is grape wine refined fermentation liquor; (3) performing malolactic fermentation on the grape wine refined fermentation liquor to obtain dry red grape raw wine; and (4) after ageing the dry red grape raw wine, clarifying and sterilizing to obtain the dry red wine. According to the production process of the dry red wine, the fruity flavor and color of the dry red wine can be improved.
