The invention discloses a production method of green plum honey whisky compound wine, which belongs to the field of wine production and comprises the following steps: (S1) sorting green plums; (S2) heat shock treatment; (S3) carbon dioxide impregnation; (S4) denucleating, crushing and pulping; (S5) performing enzymolysis and juicing; (S6) inoculating and fermenting; (S7) performing ultrahigh-pressure extraction on the plum kernels; and (S8) blending. According to the production method of the green plum honey whisky compound wine, the green plum honey whisky compound wine contains rich aroma components and organic acids.
