A bottling system for sparkling wines comprises an autoclave (10) containing a liquid (L) consisting in sparkling wine, a compensation cylinder (30) containing an inert gas, and a transfer manifold (40) for transferring the liquid from the autoclave (10) into a bottle (B); the transfer manifold (40) comprises a collar (41) applicable to a neck (C) of a bottle (B) and provided with an axial conduit (42) for the insertion of a cap (T) in order to close the bottle, and an inlet (43) connected to the autoclave (10) for transferring the liquid (L) from the autoclave to the bottle; the compensation cylinder (30) is hydraulically connected to the autoclave (10); and the transfer manifold (40) comprises an outlet (44) connected to the autoclave (10) in order to send gas from the bottle (B) to the autoclave (10).
