The invention discloses a preparation method of yellow peach wine, which abandons a traditional method for preparing fruit juice by pulping yellow peaches, and obtains yellow peach fruit juice with relatively low solid content and cellulose content by performing one-way multiple squeezing on large yellow peaches; the yellow peach particles are prepared from the squeezed yellow peaches and are used for supplementing sugar after secondary fermentation, so that the required sugar can be supplemented, the appearance uniqueness and the taste richness of the sparkling wine can be improved, and the market competitiveness of the yellow peach wine provided by the invention is further improved.
