The present invention provides a longan wine production method, and relates to the technical field of fruit wine brewing, the method comprises the following steps: fresh longan fruits are subjected to hot air drying, pulp and kernel are separated, and the pulp and the kernel are respectively dried; crushing the dried pulp and kernels together to obtain longan powder, and steaming the longan powder to obtain longan pulp; sequentially performing gelatinization and enzymolysis saccharification treatment on the longan pulp, and adding yeast for making hard liquor for fermentation to obtain longan raw wine; after distilling the longan raw wine, performing aging treatment to obtain aged longan wine; and adding gelatin, stirring and filtering to obtain the longan wine, thereby achieving the technical effects of brewing the longan wine which is sweet in taste, mellow and fine in mouth feel, sweet and smooth in aftertaste and clear and transparent in wine color.
