Fecha de publicación: 27/09/2022 Fuente: WIPO Wine The invention discloses a soy sauce wine open-air water storage system which comprises a water storage pool arranged in an open-air environment, and the water storage pool is used for placing a wine jar sealed with wine liquid; the water storage pool is of a sealed pool body structure with an opening in the upper portion, pool water is stored in the water storage pool, the daytime water temperature and the night water temperature of the pool water are 24-28 DEG C and 16-20 DEG C respectively, and the depth of the pool water is 20-25% of the height of the wine jar or the height of the wine liquid. Meanwhile, the invention further discloses an open-air water storage process of the sauced wine. The water storage pool is used for storing the wine jars, external real-time environment temperature changes are combined with pool water temperature changes and water level adjustment, wine aging can be accelerated more quickly in a natural means, and the wine quality can be kept and improved.
