The invention relates to the technical field of image processing, in particular to a monitoring system for a wine brewing fermentation process, the system comprises a memory and a processor, the processor executes a computer program stored in the memory to realize the following steps: judging a large stage of fermentation mash according to a gray value in a gray image of the fermentation mash; in the earlier stage, obtaining the fermentation degree according to each pore area in the grayscale image; whether the fermentation degree is larger than or equal to a first threshold value or not is judged, if yes, the stage is a vigorous fermentation stage, and if not, the stage is a fermentation starting stage; in the later stage, obtaining the brightness of the fermentation mash image according to the fermentation mash image; if the brightness degree is greater than a second threshold value, a fermentation ending stage is determined; calculating a color difference degree corresponding to the fermentation mash image; if the color difference degree is smaller than a third threshold value, it is judged that fermentation is completed. According to the method, the fermentation stage can be determined more accurately, and the fermentation ending time is controlled.
