The invention provides a raspberry fermented wine preparation method, which comprises: selecting raspberry, washing with clear water, and drying in a drying oven; crushing and sieving with a 40-mesh sieve; putting the raspberry powder into a conical flask, adding water, and uniformly stirring; sterilizing in a high-pressure sterilization pot, adding cellulase, hemicellulase and pectinase according to the dosage of the fermented raspberries after the materials are cooled to 50 +/-2 DEG C, performing enzymolysis in an incubator, and then adding sucrase for enzymolysis; adding sodium pyrosulfite and anhydrous dextrose to adjust soluble solids in the saccharified liquid, then adding activated saccharomyces cerevisiae, and placing the mixture in a constant-temperature incubator for culture and fermentation.
