SUBSTANCE: invention relates to the field of wine-making. Method for increasing the safety of wine involves, in the process of wine production by processing grapes resulting in wort, including clarification, fermentation, treatment, and filtration thereof, the stage of treating the wine materials and wort at the clarification stage before fermentation. The wort is treated with a mixture of bentonite and chitosan in certain concentrations and ratios of the mixture. The wine materials are treated with a mixture of chitosan with polyvinylpolypyrrolidone in certain concentrations and ratios of the mixture. Each treatment is followed by holding until sedimentation and filtering.
EFFECT: better quality and consumer safety of the wine due to the removal of biogenic amines, mycotoxins from the wort and wine and lowering the concentration of toxic elements.
