The invention discloses a method for extracting prolamin from white spirit vinasse, and belongs to the technical field of functional component extraction. The method comprises the steps of pretreatment, primary degreasing and decoloration, extraction, secondary decoloration and aftertreatment. The absolute ethyl alcohol and activated carbon dual degreasing and decoloring method adopted by the invention is simple to operate, relatively low in cost, safe, non-toxic, green and environment-friendly, is convenient for large-scale industrial production and has application value, and the decoloring rate is effectively improved; the alcohol soluble protein is extracted by the ethanol solution, so that the protein extraction rate is high, and the method is non-toxic, environment-friendly and relatively low in cost; and an ultrasonic-rotary evaporation-salting-out method is adopted, so that the salting-out loss can be reduced, the yield can be improved, the extraction time can be effectively shortened, and the production efficiency can be improved. The vinasse is used as a raw material, wine making waste is converted and extracted, the additional value of the vinasse is increased, the vinasse is wide in source, and good social benefits and economic benefits are achieved.
