The invention discloses a method for evaluating the influence degree of the trace component level of a wine body on alcohol metabolism in the technical field of brewing. The method comprises the following steps: step 1, preparing a mixed solution; 2, adding 10 [mu] L of 0.9 U ALDH acetaldehyde dehydrogenase, determining the light absorption value A under the condition of the wavelength of 340 nm, determining the light absorption value A of a blank hole as a blank tube A, then incubating at 35 DEG C for 5 min, reading the absorbance value once every 1 min, and calculating the average light absorption value A as a determination tube A and A340 = (determination tube A-blank tube A); and step 3, defining the activity of the acetaldehyde dehydrogenase: the enzyme activity of one acetaldehyde dehydrogenase is equivalent to the quantity change of 0.001 of OD340 value within each minute at 35 DEG C, namely, the enzyme activity is defined as one activity unit. And 4, analyzing the activity of the acetaldehyde dehydrogenase of the trace components under different concentrations according to the formula. According to the method, the influence degree of trace components in different wine bodies on alcohol metabolism after drinking can be evaluated.
