A method for determining a reference value of wine for fillability into aluminum cans, the method comprising: a step for acquiring the pH, the alcohol concentration and the free sulfurous acid concentration of each one of a plurality of kinds of wine; a step for calculating respective molecular SO2 concentrations of the plurality of kinds of wine from the acquired values of the pH, the alcohol concentration and the free sulfurous acid concentration; a step for sealing the plurality of kinds of wine into aluminum cans of a same kind, thereby obtaining a plurality of kinds of canned wine; a step for storing the plurality of kinds of canned wine and evaluating the qualities of the plurality of kinds of canned wine after the storage; and a step for determining the upper limit of the molecular SO2 concentration on the basis of the evaluation results obtained by the evaluation.
