METHOD FOR DETECTING WATER-SOLUBLE ANIONIC SYNTHETIC PIGMENT IN FOOD

A method for detecting a water-soluble anionic synthetic pigment in food, the method comprising: extracting a sample by means of an organic solvent, dispersing the solid phase, then extracting, purifying and diluting same, determining 92 kinds of water-soluble anionic synthetic pigments (containing 10 groups of 24 isomers) by using high-performance liquid chromatography-quadrupole static electron orbit ion trap mass spectrometry, establishing a calibration curve by using a standard solution, and quantifying same by using an external standard method. Taking advantage of the high resolution of quadrupole static electron orbit ion trap mass spectrometry combined with a liquid chromatography separation means, according to the difference of secondary mass spectrometry of the isomers, 92 kinds of water-soluble anionic synthetic pigments containing multiple groups of isomers can be qualitatively and quantitatively determined, and the identification of isomers of water-soluble synthetic pigments that are allowed to be used and forbidden to be used in food can be realized.
