The invention belongs to the technical field of honey food, and particularly relates to mead and a production method thereof.The mead is prepared from, by mass, 30-40 parts of honey, 20-35 parts of black rice, 80-160 parts of purified water, 3-6 parts of passion fruits, 2-3 parts of fructus lycii and 0.5-1 part of yeast. The honey wine is prepared by the following method: 1) cooking black rice, and cooling to 28-33 DEG C; uniformly stirring the yeast and the black rice, controlling the temperature to be 20-30 DEG C, and standing for 24-48 hours to obtain a mixture; 2) diluting honey with purified water, and then heating and sterilizing; (3) adding the Chinese wolfberry fruits and the passion fruits into the honey, then adding the mixture, and performing fermentation in fermentation equipment for 15-20 days; 4, the clarified liquor on the upper portion of the fermentation equipment is replaced with another fermentation equipment, a clarifying agent is added, the clarified liquor is mixed evenly and sealed for 5-8 d, and 5, the clarified liquor on the upper portion of the fermentation equipment is taken out and sterilized to obtain the mead. The mead prepared through the scheme is rich in taste level and has the health-care effects of tonifying the spleen, maintaining beauty and keeping young, inhibiting aging, improving immunity and the like.
