The invention discloses a ginger wine fermentation brewing process. The process comprises the following steps: S1, preparing raw materials: glutinous rice, distiller's yeast and fresh ginger; s2, soaking glutinous rice, washing the soaked glutinous rice, and cooking the washed glutinous rice to obtain cooked glutinous rice; s3, mixing distiller's yeast and glutinous rice, and performing sealed fermentation to obtain a semi-fermented material; s4, crushing fresh ginger, mixing the crushed fresh ginger with the semi-fermented material, and performing sealed fermentation again; s5, squeezing the fermented product to obtain fermentation liquor, sterilizing the fermentation liquor, and filling the sterilized fermentation liquor into a jar; s6, storing the jar in a cellar; and S7, extracting the supernatant from the jar, filtering to obtain the ginger wine, and filling. The invention relates to the technical field of wine brewing. The invention solves the problems that the pure rice wine is not enough for preserving health and is spicy in mouth feel.
