The invention belongs to the field of food processing, and particularly relates to giant salamander liver peptide liquor and a preparation method thereof.The giant salamander liver peptide liquor is obtained by mixing giant salamander liver peptide powder and base liquor according to the mass ratio of (1-1.5): 100, and the preparation method of the giant salamander liver peptide liquor comprises the steps that gall bladders of isolated giant salamander livers are removed, the giant salamander livers are soaked in a saline solution, then the giant salamander livers are fermented with activated yeast water, smashed and mixed with water, and the giant salamander liver peptide liquor is obtained. Adding trypsin and flavourzyme for double enzymolysis, and centrifuging to obtain filtrate; decolorizing and deodorizing the filtrate; filtering and drying to obtain giant salamander liver peptide powder; the giant salamander liver peptide powder is added into 12-55-degree base liquor according to the mass ratio of the giant salamander liver peptide powder to the base liquor being (1-1.5): 100, and the giant salamander liver peptide liquor improves the activity of ethanol dehydrogenase and acetaldehyde dehydrogenase in the liver, promotes decomposition of ethanol and acetaldehyde, improves the activity of SOD and GSH-Px enzymes in the liver, inhibits the activity of glutamic-pyruvic transaminase and glutamic oxalacetic transaminase, reduces the MAD content in liver tissue, and improves the liver health. The effects of dispelling the effects of alcohol and protecting the liver are achieved during drinking.
