The invention provides a fermentation and preparation method of rose red wine. The rose red wine is prepared from the following raw materials in parts by mass: 1 part of petals of double-petal red roses in the first stage of each year, 20 to 39 parts of water and 0.0015 to 0.0613 part of fermentation strains, the prepared rose wine is light red or pink, the alcoholic strength is 9-20% vol, and the total sugar content is 2.3-4.0 g/L. The fermentation and preparation method of the rose red wine, provided by the invention, has the advantages of better fragrance and color after being brewed, and better clarity and stability of the rose wine.
