The invention relates to the production of still wine derived from specific grape varieties, monovarietal grapes, and from addition of organic Crocus Sativus L. in order to create a new class of wine that originates from antiquity. Organic Crocus Sativus L. is added during the single fermentation that characterizes these wines, in the final stages of vinification and before their final filtration.
