The invention discloses sparkling yellow rice wine and a preparation method thereof, and belongs to the technical field of yellow rice wine brewage, and the preparation method of the sparkling yellow rice wine comprises the following steps: mixing dry type red koji yellow rice wine, sweet type red koji yellow rice wine and purified water, filtering, cooling to-4-0 DEG C, and preserving heat for 72-96 hours; performing ultrafiltration on the wine body subjected to heat preservation to obtain sake, and controlling the temperature of the sake to be-2 to 2 DEG C; and mixing the sake with carbon dioxide at-2-2 DEG C to obtain the bubble yellow wine. The sparkling yellow wine has a refreshing feeling similar to that of a carbonated beverage after being drunk in ice, and carbon dioxide enables the wine to be more diluted, not prone to drunkenness, fresh, sweet and tasty, and is suitable for emerging consumers who do not drink yellow wine and the like.
