The invention relates to a tomato seed extraction method. The method comprises the following steps: (1), smashing tomato fruits into sauce and putting the sauce into a nonmetal container; (2), adding diluted hydrochloric acid into the tomato sauce to adjust the pH value of the tomato sauce to be 3.0-6.0, and controlling the temperature of the tomato sauce to be 15-55 DEG C; (3), adding pectinase into the tomato sauce and stirring uniformly by using a plastic rod; (4), standing for 2 hours and stirring the tomato sauce by using the plastic rod; and (5), standing for 2 hours again, pouring the tomato sauce into excessive water, stirring by using the plastic rod, repeatedly rinsing, and filtering to obtain tomato seeds. The tomato seed extraction method disclosed by the invention has the following benefits: 1, the fermentation time is shortened to 4 hours from 36 hours, so that the germination phenomenon in a seed fermentation process is avoided and the seed quality is improved; and 2, the stirring work in the fermentation process is reduced, so that the time and labor are saved.
