The invention discloses a tomato processing suitability evaluation method and model construction. The evaluation method comprises the following steps of: measuring color L *, color a *, color b *, total sugar content, reducing sugar content, fructose content and glucose content of a tomato sample to-be-detected; and substituting the measured values into a formula (1) to obtain the quality of the tomato product processed by the tomato sample to-be-detected. And if the obtained calculated value of the quality of the tomato product is greater than or equal to 43, determining that the to-be-detected tomato sample is a tomato product suitable for processing, otherwise, determining that the to-be-detected tomato sample is a tomato product not suitable for processing. The tomato processing suitability evaluation method based on tomato quality provided by the invention has good reliability, and the total matching degree of varieties reaches 80%. Therefore, the method can be applied to the tomato processing industry and has high practical application value.
