PROBLEM TO BE SOLVED: To provide tomato powder in which cis-type lycopene is enriched by efficiently cis-isomerizing lycopene without using a chemical such as an organic solvent, a method of producing the tomato powder in which the cis-type lycopene is enriched, and a method of producing a tomato powder extract.SOLUTION: Tomato powder in which cis-type lycopene is enriched contains 20 mass% or more of the cis-type lycopene when the total of lycopene is 100 mass%.
