TOMATO CHOCOLATE HAVING A PREVENTION EFFECT ON VARIOUS ADULT CHRONIC DISEASES, AND A PRODUCING METHOD THEREOF

PURPOSE: Tomato chocolate having a prevention effect on various adult chronic diseases, and a producing method thereof are provided to offer an anti-aging effect of tomato to users. CONSTITUTION: A producing method of tomato chocolate comprises the following steps: par-boiling 71-81wt% of fresh tomato for peeling the skin, and crushing the tomato before heating and concentrating; mixing the concentrated tomato with 12-22wt% of oligosaccharide, 5.9-15.9wt% of sugar, 1-11wt% of pectin, and 0.1-10.1wt% of citric acid to obtain tomato jam(10); inserting the tomato jam into a truffle shell(20) through an inlet on the upper side before hardening; and laminating chocolate(30) mixed with rice snack powder(40) on the outside of the truffle shell to obtain a chocolate layer(50). The chocolate contains 60-66wt% of cocoa mass, 6-12wt% of white sugar, 10-16wt% of cocoa butter, and 18-24wt% of vanilla. COPYRIGHT KIPO 2012
