The invention provides a pure-natural tomato powder cooked by baking at a low temperature and a preparation method thereof. The preparation method of the tomato powder comprises: cleaning tomato, removing pedicles, slicing, blanching tomato slices in boiled salt water with a temperature of 95 DEG C or more, taking out, draining water on surfaces of tomato slices by employing a dewatering machine, performing vacuum baking on dewatered tomato slices at a constant temperature of 50-60 DEG C by employing low-temperature baking equipment to obtain cooked dried tomato slices, performing sterilization on the cooked dried tomato slices, grinding into a tomato powder by employing a grinder, and subpackaging according to requirements. The tomato powder is pure-natural green health-care foodstuff containing no any additives. The particle fineness of the cooked tomato powder is 120 mesh or more, the original taste, the nutritional compositions and the good color of tomato are kept, the powder has a micro porous structure, has good rehydration characteristic, can be eaten for a long time by directly brewing with boiled water, and also can be used as an ingredient of foodstuff and beverages. The cooked dried tomato slices can be directly eaten and sold after being sterilized.
