PROBLEM TO BE SOLVED: To provide a method for producing a tomato puree having an original flavor of the tomato by which the tomato puree is produced without damaging the original flavor of the tomato, and hardly causing the heating odor caused by the heating treatment in a vacuum concentration process and a process of the sterilization or the like. SOLUTION: The production step of a tomato puree comprises the addition of a vinegar, especially at the boiling time after adding water to the tomato paste or the tomato puree to dilute the tomato paste or the tomato puree, and heating the tomato paste or the tomato puree.
