Preparation technique of natural fresh tomato additive

The invention relates to a preparation process of natural fresh tomato additive, which includes steps: (1) washing fresh tomato with alkali solution for 10-30 minutes, wherein the content of the alkali solution is 1-1.5% and the temperature of the alkali solution is 30-40 DEG C; (2) cutting the washed fresh tomato into slice or segment with length of 1-2 cm; (3) crushing the fresh tomato slice or segment into thread with length of 2-3 millimeters and diameter of 0.5 millimeter by a pulverizer; (4) adding starch into the thread tomato, stirring and standing for 5 minutes, wherein the addition amount is 5 grams pre 100 grams of tomato thread; and (5) drying for 20-30 seconds at temperature of 30-40 DEG C by a centrifugal drier, filtering, and removing crushed powder. The natural fresh tomato additive is ultra-fine thread product, natural fibre of the natural fresh tomato additive is not destroyed, thereby being favourable to human body health; the natural fresh tomato additive is prepared by low temperature drying, loss of natural fibre of the natural fresh tomato additive is less, thereby having rich nutrient composition and maintaining flavor of fresh tomato.
